Blackened Catfish

Ingredients
- 4 catfish fillets
- 2 tbsp paprika
- 1 tbsp each garlic and onion powder
- Thyme, oregano, cayenne
- 60g melted butter
- Salt and pepper
- Lemon to serve
Method
- Mix the blackening spice blend.
- Dip fillets in melted butter and coat in spice.
- Sear in a smoking-hot cast-iron skillet until a dark crust forms.
- Flip once, finish cooking, and serve with lemon.
