Ingredients

  • 4 catfish fillets
  • 2 tbsp paprika
  • 1 tbsp each garlic and onion powder
  • Thyme, oregano, cayenne
  • 60g melted butter
  • Salt and pepper
  • Lemon to serve

Method

  1. Mix the blackening spice blend.
  2. Dip fillets in melted butter and coat in spice.
  3. Sear in a smoking-hot cast-iron skillet until a dark crust forms.
  4. Flip once, finish cooking, and serve with lemon.
