Chicken and Sausage Gumbo

Ingredients
- 1/2 cup oil and 1/2 cup flour
- 400g andouille sausage
- 400g chicken thigh
- 1 onion, bell pepper, celery
- 1.5L stock
- Cajun seasoning and bay
- Cooked rice to serve
Method
- Cook oil and flour into a chocolate-brown roux, stirring constantly.
- Add the trinity and soften in the roux.
- Stir in stock, sausage, chicken, and seasoning and simmer an hour.
- Skim, adjust the heat, and serve over rice.
