Chicken and Sausage Gumbo

Ingredients

  • 1/2 cup oil and 1/2 cup flour
  • 400g andouille sausage
  • 400g chicken thigh
  • 1 onion, bell pepper, celery
  • 1.5L stock
  • Cajun seasoning and bay
  • Cooked rice to serve

Method

  1. Cook oil and flour into a chocolate-brown roux, stirring constantly.
  2. Add the trinity and soften in the roux.
  3. Stir in stock, sausage, chicken, and seasoning and simmer an hour.
  4. Skim, adjust the heat, and serve over rice.
