Ingredients
- 1kg ripe tomatoes
- 1 cucumber
- 1 green pepper
- 1 garlic clove
- 3 tbsp olive oil
- 1 tbsp sherry vinegar
- Stale bread to thicken
Method
- Roughly chop the vegetables and soak the bread.
- Blend everything until completely smooth.
- Stream in olive oil and vinegar to emulsify.
- Chill thoroughly and serve cold with a drizzle of oil.
