Gazpacho

Ingredients

  • 1kg ripe tomatoes
  • 1 cucumber
  • 1 green pepper
  • 1 garlic clove
  • 3 tbsp olive oil
  • 1 tbsp sherry vinegar
  • Stale bread to thicken

Method

  1. Roughly chop the vegetables and soak the bread.
  2. Blend everything until completely smooth.
  3. Stream in olive oil and vinegar to emulsify.
  4. Chill thoroughly and serve cold with a drizzle of oil.
