Korean Fried Chicken
Double-fried chicken lacquered in a sticky sweet-spicy glaze.

Ingredients
- 1kg chicken wings
- 1/2 cup cornstarch
- 3 tbsp gochujang
- 2 tbsp honey
- Soy, garlic, and ginger
- Rice vinegar
- Sesame seeds
Method
- Coat the wings in cornstarch for an extra-crisp shell.
- Fry once at medium, rest, then fry again hot until shatteringly crisp.
- Simmer gochujang, honey, soy, and garlic into a glossy sauce.
- Toss the wings in the glaze and finish with sesame.
