- 8 rice paper wrappers
- 200g cooked shrimp, halved
- 100g vermicelli noodles
- Lettuce, mint, and cilantro
- Carrot, julienned
- Peanut dipping sauce
Method
- Soften each rice paper in warm water until pliable.
- Lay shrimp, noodles, herbs, and carrot near one edge.
- Roll tightly, folding in the sides like a burrito.
- Serve fresh with peanut dipping sauce.
