- 2kg beef bones
- 500g brisket
- Onion and ginger, charred
- Star anise, clove, cinnamon
- 400g rice noodles
- Fish sauce
- Thai basil, bean sprouts, lime
Method
- Char the onion and ginger, then simmer with bones for hours.
- Toast the whole spices and add to the broth, then strain.
- Cook the noodles and slice the cooked brisket.
- Assemble bowls with noodles, beef, and hot broth, served with herbs.
