Ingredients

  • 2kg beef bones
  • 500g brisket
  • Onion and ginger, charred
  • Star anise, clove, cinnamon
  • 400g rice noodles
  • Fish sauce
  • Thai basil, bean sprouts, lime

Method

  1. Char the onion and ginger, then simmer with bones for hours.
  2. Toast the whole spices and add to the broth, then strain.
  3. Cook the noodles and slice the cooked brisket.
  4. Assemble bowls with noodles, beef, and hot broth, served with herbs.
