Classic Tiramisu
Espresso-soaked ladyfingers layered with airy mascarpone cream and dusted cocoa.

Ingredients
- 300g ladyfingers
- 300ml strong espresso, cooled
- 4 egg yolks
- 100g sugar
- 500g mascarpone
- 240ml heavy cream, whipped
- Cocoa powder for dusting
Method
- Whisk yolks and sugar over a bain-marie until pale and thick, then cool slightly.
- Fold in the mascarpone, then gently fold through the whipped cream.
- Dip ladyfingers in espresso and layer with cream in a dish, repeating twice.
- Chill at least four hours and dust generously with cocoa before slicing.
