Classic Tiramisu

Ingredients

  • 300g ladyfingers
  • 300ml strong espresso, cooled
  • 4 egg yolks
  • 100g sugar
  • 500g mascarpone
  • 240ml heavy cream, whipped
  • Cocoa powder for dusting

Method

  1. Whisk yolks and sugar over a bain-marie until pale and thick, then cool slightly.
  2. Fold in the mascarpone, then gently fold through the whipped cream.
  3. Dip ladyfingers in espresso and layer with cream in a dish, repeating twice.
  4. Chill at least four hours and dust generously with cocoa before slicing.
