Ingredients
- 500ml heavy cream
- 1 vanilla pod
- 5 egg yolks
- 100g sugar plus extra for the top
Method
- Warm the cream with split vanilla and steep off the heat.
- Whisk yolks and sugar, then temper in the warm cream.
- Bake the custards in a water bath until just set, then chill.
- Dust with sugar and torch to a glassy amber crust.
