Ingredients

  • 500ml heavy cream
  • 1 vanilla pod
  • 5 egg yolks
  • 100g sugar plus extra for the top

Method

  1. Warm the cream with split vanilla and steep off the heat.
  2. Whisk yolks and sugar, then temper in the warm cream.
  3. Bake the custards in a water bath until just set, then chill.
  4. Dust with sugar and torch to a glassy amber crust.
