Ingredients

  • 1kg beef chuck, cubed
  • 150g lardons
  • 2 carrots and 1 onion
  • 500ml red Burgundy
  • 2 tbsp tomato paste
  • Beef stock
  • Thyme, bay, and mushrooms

Method

  1. Sear the beef in batches until deeply browned.
  2. Soften the lardons and vegetables, then stir in tomato paste.
  3. Deglaze with wine, return the beef with stock and herbs.
  4. Braise low for three hours, adding mushrooms near the end.
