- 1kg beef chuck, cubed
- 150g lardons
- 2 carrots and 1 onion
- 500ml red Burgundy
- 2 tbsp tomato paste
- Beef stock
- Thyme, bay, and mushrooms
Method
- Sear the beef in batches until deeply browned.
- Soften the lardons and vegetables, then stir in tomato paste.
- Deglaze with wine, return the beef with stock and herbs.
- Braise low for three hours, adding mushrooms near the end.
