Ingredients
- 2 tbsp olive oil
- 1 onion and pepper
- 3 cloves garlic
- 800g chopped tomatoes
- Cumin, paprika, chili
- 4-6 eggs
- Feta and parsley
Method
- Soften onion and pepper, then add garlic and spices.
- Pour in tomatoes and simmer to a thick sauce.
- Make wells and crack in the eggs.
- Cover and cook until the whites set, then top with feta and parsley.
