Ingredients

  • 2 tbsp olive oil
  • 1 onion and pepper
  • 3 cloves garlic
  • 800g chopped tomatoes
  • Cumin, paprika, chili
  • 4-6 eggs
  • Feta and parsley

Method

  1. Soften onion and pepper, then add garlic and spices.
  2. Pour in tomatoes and simmer to a thick sauce.
  3. Make wells and crack in the eggs.
  4. Cover and cook until the whites set, then top with feta and parsley.
