Ingredients

  • 500g ground beef
  • 8 corn tortillas
  • 3 dried ancho chiles
  • 2 cups tomato sauce
  • 2 cups shredded cheese
  • 1 onion, diced
  • Garlic, cumin, and oregano

Method

  1. Simmer soaked anchos with tomato, garlic, and spices, then blend into a smooth red sauce.
  2. Brown the beef with onion and season well.
  3. Fill tortillas with beef, roll, and arrange seam-down in a baking dish.
  4. Smother with red sauce and cheese, then bake until bubbling and lightly browned.
