Ingredients
- 1 cup stone-ground grits
- 4 cups water and milk
- 100g cheddar
- 400g shrimp
- 4 strips bacon
- Garlic and scallion
- Lemon and hot sauce
Method
- Simmer grits low and slow until creamy, then stir in cheese.
- Crisp the bacon and reserve the fat.
- Saute shrimp with garlic in the bacon fat until just pink.
- Spoon shrimp over the grits and finish with scallion and lemon.
