Ingredients
- 500g chicken thigh, sliced
- 3 tbsp green curry paste
- 400ml coconut milk
- 1 cup eggplant and bamboo
- Fish sauce and palm sugar
- Thai basil
- Kaffir lime leaves
Method
- Fry the curry paste in thick coconut cream until fragrant.
- Add the chicken and seal in the paste.
- Pour in coconut milk and vegetables and simmer until tender.
- Season with fish sauce and sugar and finish with Thai basil.
