Ingredients

  • 500g chicken thigh, sliced
  • 3 tbsp green curry paste
  • 400ml coconut milk
  • 1 cup eggplant and bamboo
  • Fish sauce and palm sugar
  • Thai basil
  • Kaffir lime leaves

Method

  1. Fry the curry paste in thick coconut cream until fragrant.
  2. Add the chicken and seal in the paste.
  3. Pour in coconut milk and vegetables and simmer until tender.
  4. Season with fish sauce and sugar and finish with Thai basil.
