Carolina Pulled Pork

Smoked pork shoulder shredded and tossed in a tangy vinegar sauce.

Ingredients

  • 1 bone-in pork shoulder (3kg)
  • 2 tbsp paprika
  • 2 tbsp brown sugar
  • Salt and pepper
  • 240ml cider vinegar
  • 1 tbsp red pepper flakes
  • Soft buns to serve

Method

  1. Rub the shoulder all over with the spice mix and rest overnight.
  2. Smoke at 225F until the bone wiggles free, about ten hours.
  3. Rest, then shred the pork by hand, discarding excess fat.
  4. Toss with the vinegar sauce and pile onto soft buns.
