Carolina Pulled Pork

Ingredients
- 1 bone-in pork shoulder (3kg)
- 2 tbsp paprika
- 2 tbsp brown sugar
- Salt and pepper
- 240ml cider vinegar
- 1 tbsp red pepper flakes
- Soft buns to serve
Method
- Rub the shoulder all over with the spice mix and rest overnight.
- Smoke at 225F until the bone wiggles free, about ten hours.
- Rest, then shred the pork by hand, discarding excess fat.
- Toss with the vinegar sauce and pile onto soft buns.
